Ingredients/Components
- plain low-fat yogurt - 2 Tbsp
- chopped celery - 1/2 c
- mustard - 1 tsp
- minced onions - 1 tsp
- dash salt and pepper - 1 item
- egg, hard cooked and chopped - 1 item
- cooked potatoes, cubed and cooled - 3 oz
- diced, drained canned pimentos - 1 Tbsp
How to make potato salad:
In medium bowl, mix first 5 ingredients. In small bowl, combine remaining ingredients; mix well. Combine yogurt mixture with potato mixture and toss gently to coat. Cover with plastic wrap. Refrigerate 1 hour.Recipe categories: Salads, Side dish, Potato.
