  • large green pepper, chopped - 1 item
  • cauliflower, chopped - 1 c
  • large tomato, chopped - 1 item
  • boxes Jiffy cornbread mix - 2 item
  • large red onion, chopped - 1 item

How to make cornbread salad:

Mix the cornbread by directions. Cool, then crumble. If you make your own cornbread, fix a 10-inch cast-iron skillet with a thick pone. Add 2 tablespoons sugar, if not using mix.

Combine all ingredients 2 hours before serving. This stores well for several days in the refrigerator, if covered tightly.
