Potato salad
Ingredients/Components
- red potatoes - 2 1/2
- Paprika - 1 item
- eggs hard boiled - 4 item
- Salt, pepper, onion powder, onion salt - 1 item
- Real mayonnaise low fat - 1 item
- american cheese slices low fat - 4 item
How to make potato salad:
Peel and quarter potatoes. Place in pot and cover with water. Add about 1 tsp. salt to water. Bring to boil, cover, and simmer about 15 minutes until soft when stuck with a fork. Drain and let cool on cutting board. When cool, cut into 1/2 inch squares and place in large bowl. Add finely diced, cooled, hard-boiled eggs. Mix with fork. Sprinkle with all four seasonings and stir, then season lightly again and stir. Begin adding mayonnaise a large spoonful at a time until all potatoes are well coated. Spoon into serving bowl. Shred cheese slices over potato salad. Sprinkle with paprika. Cover and chill until ready to serve.Recipe categories: Salads, Side dish, Potato.
