Ingredients/Components
- sugar - 1/4 c
- salt
- water - 1/4 c
- egg - 1 item
- shortening - 1/4 c
- sifted all-purpose flour - 4 4
- active dry yeast - 1 pkg
- milk, scalded - 1 c
- hot mashed potatoes - 1/2 c
How to make potato rolls:
Soften active dry yeast in warm water. Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm. Add softened yeast and egg. Stir in 2 cups of the flour; beat well. Stir in remaining flour (or enough to make a soft dough). Knead on lightly floured surface until smooth and elastic (6 to 8 minutes). Cover; let double (1 hour) in a warm place. Punch down. Shape in a ball, cover and let rise 10 minutes. Make into rolls and place on a greased cookie sheet. Let rise 1 hour.
