Ingredients/Components
- sugar - 1/4 c
- salt
- egg - 1 item
- shortening - 1/4 c
- warm water - 1/4 c
- sifted all-purpose flour - 4 4
- active dry yeast - 1 pkg
- milk, scalded - 1 c
- hot, mashed potatoes - 1/2 c
How to make potato rolls:
Soften yeast in warm water (110°). Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm. Add softened yeast and egg. Stir in 2 cups of flour; beat well. Stir in remaining flour (or enough to make soft dough).Knead on lightly floured surface until smooth and elastic (6 to 8 minutes). Place in lightly greased bowl, turning once to greased surface. Cover. Let rise until double (about 1 hour). Punch down. Shape in ball. Cover and let rest 10 minutes.
Shape in rolls. Place on greased baking sheet. Let rise until almost double (about 1 hour). Bake in hot oven at 400° for 10 to 12 minutes. Makes 2 dozen.
