- sugar - 2 c
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- salt - 1/2 tsp
- flour - 2 c
- soda - 1 tsp
- cocoa - 4 Tbsp
- buttermilk - 1 c
- margarine - 1 c
- warm mashed potatoes - 1 c
How to make potato cake:
Cream sugar and margarine. Add eggs, one at a time, beating after each one. Add potatoes. Sift together dry ingredients and add alternately with buttermilk. Add vanilla and nuts. Pour into 9 x 13 x 2-inch pan. Bake at 350° for 30 minutes.Recipe categories: Lunch/snacks, Side dish, Potato.
