Ingredients/Components

  • water - 2 qt
  • boiling water - 2 qt
  • can tomato sauce - 1 oz
  • oregano - 1/2 tsp
  • basil - 1/2 tsp
  • large onion, diced - 1 item
  • thyme - 1/2 tsp
  • macaroni - 2 diced
  • beef broth - 1 c
  • cumin - 1/2 tsp
  • ham hock - 1 item
  • head cabbage, chopped - 1 item
  • small can diced tomatoes - 1 item
  • garlic salt, salt and pepper - 1 item
  • dried kidney beans - 2 c
  • hot Portuguese sausage or linguica - 1/2 lb

How to make portuguese bean soup:

Wash beans and put in a large Dutch oven. Cover with boiling water and let stand 1 hour. Cut sausage into 1/4-inch slices. Add with onion to the undrained beans. Cook for one hour over low heat until beans are tender. Add other ingredients. Simmer 1 1/2 hours, adding more water, if needed.
