Ingredients/Components
- butter or margarine - 3 Tbsp
- salt
- all-purpose flour - 3 Tbsp
- cooking oil - 2 Tbsp
- pepper - 1/4 tsp
- can chicken broth - 1 oz
- medium onion, sliced - 1 item
- rib or loin pork chops 1-inch thick - 6 item
- additional salt and pepper optional - 1 item
- paprika and chopped fresh parsley optional - 1 item
- thinly sliced peeled potatoes about 4 lb - 6 c
How to make pork chops with scalloped potatoes:
In a saucepan, melt butter; stir in flour, salt and pepper. Add chicken broth; stir constantly until mixture boils. Cook for one minute; remove from heat and set aside.In a skillet, brown pork chops in oil; season to taste with additional salt and pepper if desired. In a greased 13 x 9 x 2-inch baking dish, layer potatoes and onion; then pour the broth mixture over them. Place pork chops on top. Cover and bake at 350° for one hour; uncover and bake 30 minutes longer or until potatoes are tender. Sprinkle with paprika and parsley if desired. Makes six servings.
