Ingredients/Components

  • ground beef - 1 lb
  • chopped green pepper - 1/2 c
  • rice - 1 c
  • salt - 1 tsp
  • black pepper - 1/2 tsp
  • chopped onion - 1 c
  • can whole tomatoes or stewed tomatoes - 1 oz
  • chopped parsley - 2 Tbsp
  • egg - 1 item
  • milk, water or tomato juice - 1/2 c
  • water, tomato juice or soup - 2 c

How to make porcupine meatballs:

Combine meat, green pepper, rice, salt, pepper, onion, parsley, egg and milk in bowl; mix well. Shape into approximately 18 meat balls and place in kettle. Add can of whole tomatoes and water. Bake at 350° for 45 to 60 minutes. Serves 6.
