  • sugar - 1/4 c
  • salt - 2 Tbsp
  • flour - 11 c
  • oil - 1/4 c
  • hot water
  • warm water - 1/2 c
  • yeast - 2 Tbsp

How to make pizza dough:

Dissolve in a small bowl the yeast and 1/2 cup warm water. In a large bowl, mix 3 1/2 cups hot water, sugar, salt and oil. Add yeast mixture to large bowl. Stir. Add in 4 cups flour (use high gluten bread flour, such as "Better for Bread"). Mix by spoon until smooth. Add in by stirring and then by kneading: 7 cups flour or more. As you knead you may add more flour until you have a ball of dough that is smooth and not sticky. Kneading makes the difference with pizza dough!

Divide into 4 or 5 equal balls (depending on how thick you like the crust). Use immediately or put in Baggies and freeze. When ready to use, defrost and roll out. Top with favorite toppings. Bake at 425° for about 20 to 30 minutes.
