  • chopped walnuts - 1 c
  • eggs - 3 item
  • oil - 1 c
  • sugar - 2 c
  • vanilla - 2 tsp
  • baking powder - 1/4 tsp
  • cinnamon
  • shredded zucchini - 2 c
  • drained crushed pineapple - 1 (8
  • flour - 3 c
  • baking soda - 2 tsp
  • salt - 1 tsp
  • nutmeg - 3/4 tsp
  • raisins - 1 c

How to make pineapple zucchini bread:

In a mixing bowl, beat eggs, oil, sugar and vanilla until thick. Stir in zucchini, pineapple, flour, soda, salt, baking powder, cinnamon, nutmeg, raisins and walnuts. Blend well.

Pour into two well-greased 5 x 9-inch loaf pans. Bake at 350° for 60 minutes or until an inserted toothpick comes out clean.
