Ingredients/Components
- eggs - 3 item
- cups sugar - 2 item
- cup oil - 1 item
- vanilla - 2 tsp
- cups zucchini, peeled and grated - 2 item
- cups flour - 3 item
- baking powder - 1 tsp
- salt - 1 tsp
- baking soda - 1 tsp
- can crushed pineapple, well drained - 1 item
- cup raisins - 1/2 item
- cup walnuts, chopped - 1 item
- cup shredded coconut - 1/2 item
How to make pineapple zucchini bread:
Beat eggs well, add sugar. Blend in oil and vanilla. Add zucchini. Add dry ingredients, then pineapple, raisins, nut, and coconut. Mix well. Pour into 2 well-greased loaf pans (don't fill too full). Bake 325° for 1 hour and 20 minutes.Recipe categories: Breads, Quick breads, Pineapple.
