  • cups sugar - 2 item
  • cup oil - 1 item
  • vanilla - 2 tsp
  • cups zucchini, peeled and grated - 2 item
  • cups flour - 3 item
  • baking powder - 1 tsp
  • salt - 1 tsp
  • baking soda - 1 tsp
  • can crushed pineapple, well drained - 1 item
  • cup raisins - 1/2 item
  • cup walnuts, chopped - 1 item
  • cup shredded coconut - 1/2 item

How to make pineapple zucchini bread:

Beat eggs well, add sugar. Blend in oil and vanilla. Add zucchini. Add dry ingredients, then pineapple, raisins, nut, and coconut. Mix well. Pour into 2 well-greased loaf pans (don't fill too full). Bake 325° for 1 hour and 20 minutes.
