Mom's banana bread
Ingredients/Components
- overripe bananas, mashed - 4 item
- 1/2 cups sugar - 1 item
- 1/2 cups flour not self rising - 1 item
- cup vegetable oil - 1/2 item
- eggs - 2 item
- cup milk - 1/4 item
- vanilla - 1 tsp
- baking soda - 1 tsp
- cup chopped pecans, optional - 1/2 item
How to make mom's banana bread:
In a large bowl mash bananas. A potato masher works great. Add remaining ingredients, mixing as you go. Pour into one non-stick or lightly greased loaf pan. You may also use 4 mini-loaf pans.Bake at 350° for 1-1 1/2 hours until top is firm and brown and a toothpick inserted in the middle comes out clean. Cool briefly in pan, then turn out on cooling rack. Freezes beautifully.
For a real southern treat, serve a slice of the banana bread with cream cheese and a slice of ham. Makes a great simple but elegant breakfast.
