Pineapple upside-down cake
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- milk - 2/3 c
- salt - 1/2 tsp
- butter - 1/3 c
- baking powder - 2 tsp
- egg - 1 item
- brown sugar, packed - 1/2 c
- soft shortening - 1/3 c
- 4 oz - 1 lb
- cake flour or 1 1/3 c
How to make pineapple upside-down cake:
Heat oven to 350°. Melt butter in an 8-inch pan. Sprinkle brown sugar evenly over butter. Arrange pineapple on butter-sugar mixture. Decorate with cherries, if desired. Stir flour, sugar, baking powder and salt in mixture in mixer bowl. Add shortening, milk and flavoring; beat 2 minutes at medium speed or 300 vigorous strokes by hand. Add egg. Beat 2 minutes. Pour batter over fruit. Bake 40 to 50 minutes. Immediately turn upside down on serving plate. Yields 8 servings.Recipe categories: Desserts, Cakes, Pineapple.
