  • sugar - 1 c
  • vanilla - 1 tsp
  • milk - 2/3 c
  • salt - 1/2 tsp
  • butter - 1/3 c
  • baking powder - 2 tsp
  • egg - 1 item
  • brown sugar, packed - 1/2 c
  • soft shortening - 1/3 c
  • 4 oz - 1 lb
  • cake flour or 1 1/3 c

How to make pineapple upside-down cake:

Heat oven to 350°. Melt butter in an 8-inch pan. Sprinkle brown sugar evenly over butter. Arrange pineapple on butter-sugar mixture. Decorate with cherries, if desired. Stir flour, sugar, baking powder and salt in mixture in mixer bowl. Add shortening, milk and flavoring; beat 2 minutes at medium speed or 300 vigorous strokes by hand. Add egg. Beat 2 minutes. Pour batter over fruit. Bake 40 to 50 minutes. Immediately turn upside down on serving plate. Yields 8 servings.
