  • sugar
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • nutmeg - 1 tsp
  • oil - 1/2 c
  • soda - 2 tsp
  • buttermilk - 3/4 c
  • flaked coconut - 1 c
  • corn syrup - 2 tsp
  • sifted flour - 2 c
  • sifted powdered sugar - 4 c
  • oleo - 1/3 c
  • shredded carrots - 2 c
  • grated orange peel - 1 tsp
  • can crushed pineapple, drained - 1 1/2
  • Beat eggs, oil, buttermilk and vanilla; add to dry ingredients
  • Spread over cake so it goes into holes

How to make pineapple carrot cake:

Sift dry ingredients into bowl. Beat eggs, oil, buttermilk and vanilla; add to dry ingredients. Blend well. Add the rest of ingredients. Bake in greased and floured 9 x 13-inch pan at 350° for 45 minutes. Remove from oven. With fork, poke holes in top to cover surface. Immediately spread with hot Buttermilk Glaze or Cream Cheese Frosting.Buttermilk Glaze:2/3 c. sugar1/4 tsp. soda1/3 c. buttermilk1/3 c. oleo2 tsp. corn syrup1/2 tsp. vanilla Combine all ingredients and simmer for 5 minutes. Spread over cake so it goes into holes.Cream Cheese Frosting:1 (3 oz.) pkg. cream cheese1/2 c. oleo4 c. sifted powdered sugar1 tsp. grated orange peel1 tsp. vanilla Beat all ingredients until creamy.
