Pineapple carrot bread
Ingredients/Components
- all-purpose flour - 3 c
- sugar - 2 c
- eggs - 3 item
- vegetable oil - 1 c
- baking soda - 1 tsp
- cinnamon - 1 tsp
- salt - 3/4 tsp
- shredded carrots - 2 c
- can crushed pineapple, drained - 1 oz
- chopped pecans or walnuts - 1 c
- vanilla - 2 tsp
How to make pineapple carrot bread:
In large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add carrots, oil, pineapple, nuts and vanilla. Stir into dry ingredients just until moistened. Spoon into greased 8 1/2 x 4 1/2-inch loaf pans. Takes two. Bake at 350° for 65 to 75 minutes or until loaves test done. Cool 10 minutes before removing from pans to wire racks. Cool completely.
