Pickled beets
Ingredients/Components
- sugar - 2 c
- salt
- water
- vinegar
- whole allspice - 1 Tbsp
- sticks cinnamon - 2 item
- small beets - 3 qt
How to make pickled beets:
You will need 6 pint jars with lids.Cook beets; wash and drain unpeeled beets. Leave 2 inches of stems and top roots. Cover with boiling water and cook until tender. Drain, cool and peel beets. Combine all ingredients except beets; simmer 15 minutes. Pack beets into hot jars, leaving 1/4 inch headspace. Remove cinnamon; bring liquid to a boil. Pour boiling hot over beets, leaving 1/4-inch headspace. Process jars 30 minutes in boiling water bath.
