Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • flour - 2 c
  • soda - 1/2 tsp
  • baking powder - 2 tsp
  • white sugar - 2 c
  • allspice - 1/4 tsp
  • melted butter or margarine - 1/2 c
  • persimmon pulp - 1 c
  • sweet milk - 2 c
  • sweet potatoes, grated or boiled - 2 c

How to make persimmon pudding:

Mix persimmon, sweet potatoes, sugar, eggs and milk together. Add flour mixture (dry ingredients, which have been mixed together), a little at a time, beating until smooth after each addition. Stir in butter. Pour mixture into greased and floured baking pan. Bake in oven at 350° until firm, about 1 1/4 hours. Nuts, raisins or coconut may be added, if desired.
