  • sifted all-purpose flour

  • unsifted confectioners sugar
  • unsifted unsweetened cocoa powder - 1 c

How to make perfect chocolate cake:

Frosting:1 (6 oz.) pkg. semi-sweet chocolate pieces1/2 c. light cream1 c. butter or margarine2 1/2 c. unsifted confectioners sugar Filling:1 c. heavy cream, chilled1/4 c. unsifted confectioners sugar1 tsp. vanilla extract In medium bowl, combine cocoa with boiling water, mixing until smooth. Cool completely. Sift flour with baking powder and salt. Preheat oven to 350°. Grease and lightly flour 3 (9-inch) layer cake pan.

In large bowl at high speed, beat butter, sugar, eggs and vanilla until light (about 5 minutes), scraping bowl occasionally. At low speed beat in flour mixture alternately with cocoa mixture, beginning and ending with flour mixture. Do not overbeat. Divide batter evenly into prepared cake pans; smooth top. Bake 25 to 30 minutes or until surface springs back when gently pressed with fingertip. Cool in pans for 10 minutes and then cool on wire racks completely.

Frosting: Combine chocolate pieces, cream and butter; stir over medium heat until smooth. Remove from heat. Blend in 2 1/2 cups confectioners sugar. In bowl set over ice, beat until frosting holds its shape.

Filling: Whip cream with confectioners sugar and vanilla; refrigerate.

Assemble cake: On plate place a layer top side down; spread with half of cream. Place second layer top side down; spread with rest of cream. Place third layer top side up. Frost sides first covering whipped cream and then top with remaining frosting. Refrigerate at least 1 hour. Serves at least 12.
