Pepper relish
Ingredients/Components
- sweet green peppers - 6 item
- sweet red peppers - 6 item
- medium onions - 6 item
- sugar - 1 c
- vinegar - 1 c
- salt
- dill seed
How to make pepper relish:
Wash peppers; remove tops. Finely grind peppers and onions; drain. In large saucepan, combine peppers and onions; cover with boiling water. Let stand 5 minutes; drain. To pepper mixture add sugar, vinegar, salt, dill seed and 1/2 cup water. Boil gently, uncovered, 5 minutes. Pack into hot half pint jars, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath 5 minutes. (Start timing when water returns to boiling.) Makes 10 half pints.Recipe categories: Sauces, Salsas, Jams and preserves.
