Ingredients/Components

  • sugar
  • vinegar - 3/4 c
  • box Sugar-Jell - 1 item
  • ground sweet and hot peppers in any amount desired for hotness - 2 c

How to make pepper jelly:

Day 1: Fill gallon glass jar with medium cucumbers. Cover with boiling water and press down.

Day 2: Drain water. Recover with boiling water and press down.

Day 3: Repeat entire process.

Day 4: Repeat entire process.

Day 5: Drain water. Remove cucumbers and slice into strips or chunks. Put back into jar. Cover with the following boiling hot mixture: 4 cups white vinegar, 5 teaspoons salt, 8 cups sugar and 2 to 3 tablespoons pickling spices. Press down cut up cucumbers.

Day 6: Drain and save solution. Put cucumbers in 6 to 8 pint jars. Bring solution to a boil and pour over cucumbers. Seal and process in boiling water for 10 minutes.

Day 7: Serve well chilled.
