  • sugar
  • vanilla - 1 tsp
  • butter or margarine - 3 Tbsp
  • water - 1 tsp
  • baking soda
  • light corn syrup - 1 c
  • shelled, unroasted peanuts - 1 lb

How to make peanut brittle:

Butter 2 baking sheets and keep warm. Combine baking soda, 1 teaspoon water and vanilla and set aside. Combine sugar, 1 cup water and corn syrup in large saucepan. Cook over medium heat, stirring occasionally, to 240° on a candy thermometer (or until small amount of syrup dropped into very cold water forms a soft ball). Stir in butter and peanuts; cook, stirring constantly to 300° (or until small amount dropped into very cold water separates into threads which are hard and brittle). Remove from heat. Stir in soda mixture, mixing thoroughly. Pour half into each pan to spread thin. Cool; break into pieces. Makes 2 pounds.
