Ingredients/Components

  • sugar - 1 c
  • vanilla - 1 tsp
  • butter - 1 tsp
  • almond extract - 1 tsp
  • baking soda - 1 tsp
  • shredded coconut - 1 c
  • white corn syrup - 1/2 c
  • roasted salted peanuts - 1 c
  • Microwave on High for 4 minutes
  • dry roasted almonds - 7 oz

How to make peanut brittle:

In 1 1/2 quart casserole, stir sugar and corn syrup together. Microwave on High for 4 minutes. Stir in peanuts. Microwave on High for 3 to 5 minutes, until light brown. Add butter and vanilla to syrup, blending well. Microwave on High for 1 to 2 minutes. Peanuts will be lightly brown and syrup very hot. Add baking soda and gently stir until light and creamy. Pour mixture onto lightly greased cookie sheet. Let cool 1/2 to 1 hour.
