  • whipping cream - 1 c
  • cloves garlic, minced - 2 item
  • Parmesan cheese - 1 item
  • minced fresh parsley - 1/4 c
  • salt and pepper - 1 item
  • mushrooms, sliced - 6 oz
  • scallions, sliced - 6 item
  • large tomatoes, peeled and chopped - 2 item
  • fettuccini noodles - 12 oz
  • slices bacon, cut in 1/2-inch strips - 4 item
  • finely shredded spinach - 1 lb

How to make pasta with spinach sauce:

In a heavy pan over moderate heat, cook bacon until fat runs. Add garlic and mushrooms and cook until they begin to lose their juices. Stir in scallions, spinach, tomatoes and parsley with salt and pepper. Cover pan and simmer gently for 10 minutes.

Meanwhile, cook fettuccini 8 minutes in boiling water. Add the cream to the sauce and simmer until lightly thickened. Adjust seasoning. Drain noodles; top with sauce and pass the cheese.
