Ingredients/Components

  • chicken broth - 5 c
  • olive oil - 2 Tbsp
  • minced garlic - 2 tsp
  • can kidney beans, drained - 1 oz
  • fresh oregano or 1 tsp - 2 tsp
  • Brussels sprouts - 1 (10
  • large, chopped onion - 1 item
  • zucchini or yellow squash - 2 c
  • uncooked ditalini - 1 c

How to make pasta and bean soup:

In large saucepan, heat oil over medium heat. Add garlic and onion; cook 5 to 7 minutes, until just tender. Add broth and 3 cups water. Bring to boil. Add pasta and cook 5 minutes. Add the last 4 ingredients and cook 7 to 8 minutes.
