Ingredients/Components
- milk - 1/3 c
- salt - 1/2 tsp
- butter or margarine, melted - 3 Tbsp
- cornmeal - 1/4 c
- paprika - 1/2 tsp
- pepper - 1/8 tsp
- dill weed - 1/4 tsp
- fine, dry breadcrumbs - 1/4 c
- fish fillets, cut into 1-inch strips orange roughy - 1 lb
- Garnishes: lemon halves, tied in cheesecloth
- flat leaf parsley sprigs - 1 item
How to make oven-fried fish:
Garnishes: lemon halves, tied in cheesecloth flat leaf parsley sprigs Combine first 6 ingredients in a shallow dish. Dip fish in milk and dredge in cornmeal mixture. Place in a lightly greased 13 x 9 x 2-inch pan and drizzle with butter. Bake at 450° for 10 minutes or until fish flakes easily when tested with a fork. Garnish, if desired.
