  • salt - 1/2 tsp
  • butter or margarine, melted - 3 Tbsp
  • cornmeal - 1/4 c
  • paprika - 1/2 tsp
  • pepper - 1/8 tsp
  • dill weed - 1/4 tsp
  • fine, dry breadcrumbs - 1/4 c
  • fish fillets, cut into 1-inch strips orange roughy - 1 lb
  • Garnishes: lemon halves, tied in cheesecloth
  • flat leaf parsley sprigs - 1 item

How to make oven-fried fish:

Garnishes: lemon halves, tied in cheesecloth flat leaf parsley sprigs Combine first 6 ingredients in a shallow dish. Dip fish in milk and dredge in cornmeal mixture. Place in a lightly greased 13 x 9 x 2-inch pan and drizzle with butter. Bake at 450° for 10 minutes or until fish flakes easily when tested with a fork. Garnish, if desired. Yield: 4 to 6 servings.
