Old fashioned potato salad
Ingredients/Components
- salt - 3/4 tsp
- dry mustard - 1 tsp
- low-fat sour cream - 3/4 c
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- diced onion - 1/2 c
- chopped fresh parsley - 2 Tbsp
- hard-cooked eggs, chopped - 3 item
- diced celery - 1/2 c
- sweet pickle relish - 1/4 c
- nonfat mayonnaise - 1/3 c
- cubed, unpeeled round red potatoes about 3 lb - 9 c
How to make old fashioned potato salad:
Place potatoes in a Dutch oven; cover with water and bring to a boil. Cook 8 minutes or until tender. Drain; place in large bowl. Add onion and next 4 ingredients; toss gently. Combine sour cream and next 5 ingredients; stir well. Pour over potato mixture; toss gently to coat. Cover and chill.Recipe categories: < 30 mins, Potato, Vegetables.
