Ingredients/Components

  • sugar - 3/4 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • flour
  • baking soda - 1 tsp
  • firmly packed brown sugar - 3/4 c
  • margarine, softened - 1 c
  • ground cinnamon - 1/2 tsp
  • salt optional - 1/2 tsp
  • oats quick or old fashioned, uncooked - 3 c

How to make oatmeal scotchies:

Heat oven to 375°. Beat margarine, sugar, eggs and vanilla until creamy. Gradually add combined flour, baking soda, salt and cinnamon; mix well. Stir in remaining ingredients.

Drop by level measuring tablespoonfuls onto ungreased cookie sheet. Bake 7 to 8 minutes for a chewy cookie or 9 to 10 minutes for a crisp cookie.
