Ingredients/Components

  • sugar - 3/4 c
  • cinnamon - 1/2 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • butter or margarine - 1 c
  • salt - 1/2 tsp
  • soda - 1 tsp
  • all-purpose flour - 1 c
  • firmly packed brown sugar - 3/4 c
  • Nestle butterscotch morsels - 1 (12
  • oats, uncooked quick or old-fashioned - 3 c

How to make oatmeal scotchies:

Preheat oven to 375°. In small bowl, combine flour, soda, salt and cinnamon; set aside. In a large bowl, combine butter, sugar, brown sugar, eggs and vanilla. Beat until light and fluffy. Gradually add flour mixture. Stir in oats and butterscotch morsels. Drop by level tablespoonfuls onto ungreased cookie sheet. Bake at 375° for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crispier cookies. Makes about 4 dozen 3-inch cookies.

Variation: For pan cookies, spread the Oatmeal Scotchie dough into a greased 15 x 10 x 1-inch baking pan. Bake at 375° for 20 to 25 minutes. Cool and cut into 35 (2-inch) squares.
