Ingredients/Components

  • eggs - 2 item
  • vanilla - 1 tsp
  • granulated sugar - 1 c
  • salt - 1 tsp
  • brown sugar - 1 c
  • soda - 1 tsp
  • quick cooking oats - 3 c
  • plain sifted flour
  • shortening 1/2 butter for flavor - 1 c

How to make oatmeal crisps:

Mix together shortening and sugars. Add vanilla and eggs. Mix well, then add flour, salt and soda. Finally, add oats. Roll batter in two rolls, in wax paper, about 2 1/2-inches thick. Place on pan in freezer. Slice about 1/3-inch thick and bake as needed. Bake 10 to 13 minutes at 375°.

Note: One-half cup of nuts and/or coconut may also be added to batter, if desired.
