Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • granulated sugar - 1 c
  • salt - 1/2 tsp
  • flour
  • brown sugar - 1 c
  • butter - 4 Tbsp
  • evaporated milk - 1/2 c
  • coconut - 1 c
  • soda - 1 tsp
  • boiling water
  • stick butter - 1 item
  • pecans - 1/2 c
  • quick cooking oats - 1 c

How to make oatmeal cake:

Boil water and pour over oats. Allow to stand for 20 minutes. Cream butter, sugar and eggs. Add oats alternately with dry ingredients. Pour into greased 9 x 13-inch pan and bake at 350° for 30 minutes.

Meanwhile, prepare topping. In saucepan, put butter, evaporated milk, pecans, coconut and brown sugar. Cook over low heat. Immediately upon removing cake from oven, spread topping over cake. Increase oven to 500° and broil topping until bubbly and browned. Watch closely! Yields 15 servings.
