- vanilla - 1 tsp
- salt - 1 tsp
- flour
- brown sugar - 1 c
- butter - 4 Tbsp
- coconut
- soda - 1 tsp
- boiling water
- stick butter - 1 item
- white sugar - 1 c
- quick oats - 1 c
- beaten eggs - 2 item
- cream or canned milk - 1/2 c
How to make oatmeal cake:
Topping:1 c. coconut1/2 c. cream or canned milk1 c. brown sugar4 Tbsp. butter Place oats in a large bowl; cover with boiling water. Let stand 10 minutes. Add butter and sugar; mix well, then add eggs and vanilla. Sift dry ingredients together. Add to liquid mixture. Bake in ungreased oblong cake pan at 350° for 35 minutes. Cake is moist when done.Topping: Place cream and butter in saucepan; bring to a boil. Add coconut and brown sugar; mix well. Take from heat. Spread on cooled cake.
