  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour
  • brown sugar - 1 c
  • butter - 4 Tbsp
  • coconut
  • soda - 1 tsp
  • boiling water
  • stick butter - 1 item
  • white sugar - 1 c
  • quick oats - 1 c
  • beaten eggs - 2 item
  • cream or canned milk - 1/2 c

How to make oatmeal cake:

Topping:1 c. coconut1/2 c. cream or canned milk1 c. brown sugar4 Tbsp. butter Place oats in a large bowl; cover with boiling water. Let stand 10 minutes. Add butter and sugar; mix well, then add eggs and vanilla. Sift dry ingredients together. Add to liquid mixture. Bake in ungreased oblong cake pan at 350° for 35 minutes. Cake is moist when done.

Topping: Place cream and butter in saucepan; bring to a boil. Add coconut and brown sugar; mix well. Take from heat. Spread on cooled cake.
