Ingredients/Components
- oatmeal - 1 c
- water boiling
- shortening - 1/2 c
- brown sugar - 1 c
- sugar - 1 c
- eggs - 2 item
- flour
- baking soda - 1 tsp
- baking powder - 2 tsp
- salt - 1/2 tsp
- cinnamon - 1 tsp
- Let stand, covered, 20 minutes
- stick oleo - 1 item
- milk - 1/2 c
- nuts - 3/4 c
- coconut - 3/4 c
- vanilla - 1 tsp
How to make oatmeal cake:
Mix oatmeal and boiling water together. Let stand, covered, 20 minutes. Stir once in between. Sift together flour, soda, powder, salt and cinnamon. In large bowl, combine oatmeal mixture and shortening. Beat until blended. Stir in brown sugar, sugar and eggs, blending thoroughly. Add dry ingredients and blend well. Bake at 350°.Icing:1 c. brown sugar1 stick oleo1/2 c. milk3/4 c. nuts3/4 c. coconut1 tsp. vanilla Bring brown sugar, oleo and milk to a rolling boil.
