  • boiling water
  • oatmeal - 1 c
  • stick butter, melted - 1 item
  • brown sugar - 1 c
  • white sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • cinnamon - 1 tsp
  • flour
  • soda - 1 tsp
  • Let stand 20 minutes
  • evaporated milk - 1/2 c
  • melted butter - 4 Tbsp
  • coconut, shredded - 1 c

How to make oatmeal cake:

Pour boiling water over oatmeal. Let stand 20 minutes. Cream the butter and sugars. Add remaining ingredients plus oatmeal. Bake in a 9 x 13-inch pan at 350° for 25 to 30 minutes.Icing:1 c. brown sugar1/2 c. evaporated milk4 Tbsp. melted butter1 c. coconut, shredded Mix together and put on cake as soon as done. Put back in oven 3 to 5 minutes until golden brown.
