Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour
- brown sugar - 1 c
- evaporated milk - 1/4 c
- flaked coconut - 1 c
- baking soda - 1 tsp
- shortening - 1/2 c
- hot water
- oatmeal - 1 c
- Cream shortening, brown sugar and regular sugar until fluffy
How to make oatmeal cake:
Combine oatmeal and water; set aside to cool. Cream shortening, brown sugar and regular sugar until fluffy. Beat in eggs, one at a time. Sift flour, salt and soda; fold into creamed mixture. Pour into a greased and floured 9 x 13-inch pan. Bake about 40 minutes at 350° or until tests done.Topping:6 Tbsp. shortening3/4 c. brown sugar1/4 c. evaporated milk1 c. flaked coconut Combine ingredients and spread over cake and broil until browned and bubbly.Recipe categories: Desserts, Cakes, Lunch/snacks.
