Oatmeal cake
Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- milk - 2 Tbsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour
- brown sugar - 1 c
- flaked coconut - 1 c
- baking powder - 1 tsp
- shortening - 1/2 c
- hot water
- oatmeal - 1 c
- white sugar - 1 c
- stick oleo - 3/4 item
How to make oatmeal cake:
Pour hot water over oatmeal and let stand 10 to 15 minutes. Cream together sugars and shortening. Add eggs and beat well. Sift together dry ingredients and add to shortening mixture. Add the oatmeal and mix well. Bake in a greased and floured 9 x 13 cake pan at 350° for 30 minutes.To make the icing, melt 3/4 stick oleo, 3/4 cup brown sugar and 2 tablespoons milk. Boil this for 1 minute; remove from heat and add the chopped nuts and coconut. Spread on baked cake while still hot and place under broiler until lightly brown.
