Oatmeal cake
Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/8 tsp
- flour
- brown sugar - 1 c
- nutmeg - 1/2 tsp
- coconut - 1 c
- soda - 1 tsp
- baking powder - 1 tsp
- boiling water
- shortening - 1/2 c
- pecans - 1 c
- white sugar - 1 c
- stick oleo - 1 item
- uncooked oatmeal - 1 c
- cream or canned milk - 1/4 c
- Mix as for regular cake
How to make oatmeal cake:
Pour water over oatmeal and let stand 20 minutes. Mix as for regular cake. Add oatmeal before adding flour. Bake at 350° for about 40 minutes in a 9 x 13-inch pan.Topping:1/2 c. brown sugar1 stick oleo1/4 c. cream or canned milk1 tsp. vanilla1 c. coconut1 c. pecans Cook sugar, cream, oleo and vanilla until slightly thick. Add coconut and nuts. Spread on cake. Put under broiler for a few minutes until it starts to brown and gets slightly crusty.Recipe categories: Desserts, Cakes, Lunch/snacks.
