Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/8 tsp
  • flour
  • brown sugar - 1 c
  • nutmeg - 1/2 tsp
  • coconut - 1 c
  • soda - 1 tsp
  • baking powder - 1 tsp
  • boiling water
  • shortening - 1/2 c
  • pecans - 1 c
  • white sugar - 1 c
  • stick oleo - 1 item
  • uncooked oatmeal - 1 c
  • cream or canned milk - 1/4 c
  • Mix as for regular cake

How to make oatmeal cake:

Pour water over oatmeal and let stand 20 minutes. Mix as for regular cake. Add oatmeal before adding flour. Bake at 350° for about 40 minutes in a 9 x 13-inch pan.Topping:1/2 c. brown sugar1 stick oleo1/4 c. cream or canned milk1 tsp. vanilla1 c. coconut1 c. pecans Cook sugar, cream, oleo and vanilla until slightly thick. Add coconut and nuts. Spread on cake. Put under broiler for a few minutes until it starts to brown and gets slightly crusty.
