Ingredients/Components
- oatmeal - 1 c
- stick margarine - 1 item
- brown sugar - 1 c
- flour, sifted
- salt - 1/2 tsp
- boiling water
- white sugar - 1 c
- eggs, beaten - 2 item
- soda - 1 tsp
- cinnamon - 1 tsp
- Cream margarine; add sugars and eggs
- coconut - 1 c
- milk - 1/2 c
- nutmeats - 1/2 c
- vanilla - 1 tsp
How to make oatmeal cake:
Pour water over oatmeal and let stand 20 minutes. Cream margarine; add sugars and eggs. Beat on medium speed for 2 minutes. Add oatmeal to mixture and beat for 2 more minutes. Add remaining ingredients and blend well. Bake 35 minutes in a 350° oven.Frosting:1/2 c. margarine1 c. coconut3/4 c. brown sugar1/2 c. milk1/2 c. nutmeats1 tsp. vanilla Bring these ingredients to a boil. Pour on hot cake and return to the oven to brown for 5 or 10 minutes.Makes a large cake. The cake is good without frosting.
