  • sugar - 2 c
  • eggs - 4 item
  • vanilla extract - 1 tsp
  • salt - 3/4 tsp
  • butter - 3/4 c
  • nutmeg - 2 tsp
  • cold water - 1/2 c
  • buttermilk
  • baking powder
  • baking soda
  • dash of salt - 1 item
  • finely chopped pecans - 1 c
  • light corn syrup
  • cream of tartar - 1/4 tsp
  • cake flour - 3 c
  • yellow food coloring - 1 item
  • vanilla flavor
  • Add eggs, one at a time, beating well after each addition

How to make nutmeg cake:

Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift together dry ingredients, add to creamed mixture alternately with buttermilk, beginning and ending with flour, beating well after each addition. Stir in vanilla extract. Pour into 3 greased and floured 9-inch round pans. Bake at 350° for 25 to 30 minutes or until cake tests done.Frosting:3 egg whites2 1/4 c. sugar2 1/4 tsp. light corn syrup1/2 c. cold water1/4 tsp. cream of tartar dash of salt1 1/2 tsp. vanilla flavor1 c. finely chopped pecans yellow food coloring Place egg whites and next 5 ingredients in top off double boiler (not over heat). Beat 1 minute with electric mixer to blend. Place over boiling water and cook, heating constantly, until frosting makes soft peaks, about 7 minutes. Remove from boiling water. Add vanilla and beat until frosting stiffens. Remove 2 cups of frosting to a separate bowl. Add pecans to this mixture; mix well. Spread between layers. Tint remaining frosting and frost top and sides of cake.
