Mushroom tarts
Ingredients/Components
- flour - 2 Tbsp
- butter - 2 Tbsp
- cream - 1 c
- lemon juice - 1 tsp
- parsley - 1/4 c
- cayenne - 1/8 tsp
- fresh mushrooms - 1 lb
- onion, grated - 1 item
- c Parmesan cheese - 1/4 item
- loaves of soft white bread - 2 item
How to make mushroom tarts:
Roll the bread slices flat with a rolling pin. Cut the bread into circles using a small bowl, and shape into tart shells in the muffin tin. Toast in the oven at 350° for 15 to 20 minutes (until they are hard and browned). Finely chop the mushrooms and mix with the other ingredients (except cheese, flour and cream). Simmer over medium or low heat until mushrooms have been reduced to a paste (about 20 minutes), stirring regularly. Now add the cheese, flour and cream and stir well over heat for 2 to 3 minutes. Pour the mixture into shells and serve!Note: These freeze well. To reheat, bake 10 to 15 minutes.
