Mushroom soup
Ingredients/Components
- butter or margarine - 1/2 c
- salt
- flour - 1 Tbsp
- cold water - 2 Tbsp
- boiling water - 3 c
- pepper - 1/4 tsp
- fresh mushrooms - 1 lb
- onion - 1/2 c
- finely chopped celery - 1 c
- diced potatoes - 1 c
- grated Parmesan cheese optional - 1/4 c
- milk or light cream half and half - 1 c
How to make mushroom soup:
Wash and slice mushrooms and set aside. Heat butter; add onion and saute until golden. Add mushrooms, remaining vege tables and seasonings. Cover. Simmer 15 to 20 minutes or until tender. Combine 1 tablespoon flour and 2 tablespoons cold water. Stir slowly into vegetable mixture. Add boiling water and simmer 10 minutes longer. Before serving, stir in milk or cream. Add cheese.
