Ingredients/Components

  • butter or margarine - 1/2 c
  • salt
  • flour - 1 Tbsp
  • cold water - 2 Tbsp
  • boiling water - 3 c
  • pepper - 1/4 tsp
  • fresh mushrooms - 1 lb
  • onion - 1/2 c
  • finely chopped celery - 1 c
  • diced potatoes - 1 c
  • grated Parmesan cheese optional - 1/4 c
  • milk or light cream half and half - 1 c

How to make mushroom soup:

Wash and slice mushrooms and set aside. Heat butter; add onion and saute until golden. Add mushrooms, remaining vege tables and seasonings. Cover. Simmer 15 to 20 minutes or until tender. Combine 1 tablespoon flour and 2 tablespoons cold water. Stir slowly into vegetable mixture. Add boiling water and simmer 10 minutes longer. Before serving, stir in milk or cream. Add cheese. Do not boil.
