  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • butter - 4 Tbsp
  • heavy cream - 1 c
  • lemon juice - 1/2 tsp
  • butter, melted - 4 Tbsp
  • Parmesan cheese, grated - 1 item
  • cayenne pepper - 1/8 tsp
  • chives, chopped
  • parsley, finely chopped - 1 Tbsp
  • mushrooms, finely chopped - 1/2 c
  • slices thin bread - 24 item
  • shallots or onion, finely minced - 3 Tbsp

How to make mushroom croustades:

Brush 24 tiny muffin tins heavily with butter. Cut out rounds of bread with 3-inch fluted or plain cutter and press gently into cups. Bake 10 minutes at 400° until golden brown. Remove from tins and cool. These freeze well.

Melt butter in a heavy skillet and before the foam subsides, add shallots or onion. Stir over moderate heat for 4 minutes. Add mushrooms, being sure they are thoroughly coated with butter. Cook about 15 minutes, stirring occasionally. Cook about 15 minutes, stirring occasionally. Cook until all moisture has evaporated. Remove from heat and stir in flour thoroughly. Add cream and bring to a boil. Simmer for a few minutes. Remove from heat and stir in seasonings and herbs. Filling is now ready for use or can be refrigerated. Fill croustades, dot with butter and sprinkle with grated Parmesan cheese. Bake in 350° oven for 10 minutes. Broil briefly until brown. Yields 24.
