Mom's oatmeal cake
Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- brown sugar - 1 c
- evaporated milk - 1/4 c
- nutmeg - 1/2 tsp
- soda - 1 tsp
- boiling water
- stick butter - 1 item
- pecans - 1 c
- white sugar - 1 c
- flour self-rising
- coconut optional - 1 c
- instant oats - 1 c
- Do not melt butter
How to make mom's oatmeal cake:
In large bowl, put oats and stick of butter. Do not melt butter. Pour boiling water over and let stand for 20 minutes. Mix remaining ingredients with oat mixture. Mix well with mixer on medium speed. Grease and flour 9 x 13-inch cake pan. Pour batter into pan and bake at 350° for 30 to 40 minutes.Icing:6 Tbsp. soft butter1/2 c. brown sugar1 c. pecans1 c. coconut (optional)1/4 c. evaporated milk1/2 tsp. vanilla Mix ingredients together in medium saucepan.
