Ingredients/Components

  • salt - 1 Tbsp
  • water - 2 qt
  • vinegar - 1/4 c
  • Worcestershire sauce - 1/2 c
  • dash of pepper - 1 item
  • ground beef - 1 lb
  • large onion, chopped fine - 1 item
  • hard-cooked eggs - 3 item
  • juice - 1 chopped
  • catsup bottle of water - 1 item
  • regular size bottle catsup - 1 item
  • gingersnaps, rolled fine - 26 item

How to make mock turtle soup:

In large pot, combine water, beef, catsup, Worcestershire sauce, onion, lemon, salt and pepper. Separate the meat into bits in the water; cook until meat is well done, about 1/2 hour. In the meantime, crush the gingersnaps by rolling between 2 pieces of wax paper. Fill the empty catsup bottle with water and in a bowl add it to the gingersnap crumbs. Stir until lumps are out and mixture well blended. Add this to the meat mixture and simmer for 1/2 hour longer, until flavor is right, stirring occasionally, so crumbs do not stick. A few minutes before mixture is ready, add vinegar and chopped eggs. Leftovers can be frozen.
