Ingredients/Components

  • eggs - 4 item
  • pkg - 1 oz
  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 2 c
  • butter - 1/2 lb
  • dash of cayenne pepper - 1 item
  • frozen broccoli, cooked and drained
  • finely chopped onion, sauteed in 1 Tbsp - 1/4 c

How to make miniature quiches:

Custard:2 Tbsp. flour1 c. milk4 eggs1/2 tsp. salt Filling:1 pkg. frozen broccoli, cooked and drained1/4 c. finely chopped onion, sauteed in 1 Tbsp. butter Mix crust ingredients together with mixer. Mix filling ingredients together. Beat custard ingredients. Roll crust into large ball and chill for 1 hour. Make into 1-inch balls and press into miniature muffin tins. Place 1/2 teaspoon of filling into each. Then add 1 tablespoon custard to each. Bake at 400° for 12 to 15 minutes. Can be made ahead, baked, frozen and reheated.
