Ingredients/Components

  • cream cheese - 3 oz
  • margarine - 1/2 c
  • flour - 1 c
  • salt to taste - 1 item
  • Filling:6 strips bacon
  • onion, chopped - 1 item
  • Swiss cheese, cubed - 1 c
  • Parmesan cheese - 1/4 c
  • eggs, lightly beaten - 4 item
  • medium cream - 2 c
  • nutmeg - 1/4 tsp
  • pepper - 1/4 tsp
  • salt - 1/2 tsp

How to make miniature quiche:

Filling:6 strips bacon1 onion, chopped1 c. Swiss cheese, cubed1/4 c. Parmesan cheese4 eggs, lightly beaten2 c. medium cream1/4 tsp. nutmeg1/4 tsp. pepper1/2 tsp. salt Blend crust ingredients together using a processor. Chill one hour. Line miniature muffin tins with pastry. Cook bacon until crisp, drain and crumble. Saute onion in bacon fat. Sprinkle onion with bacon and cheese over the crust.

Combine eggs, cream, nutmeg, salt and pepper; pour into pastry. Bake in a preheated 450° oven for 10 minutes. Reduce heat to 350° and bake for another 10 minutes. Serve immediately or freeze. If frozen, reheat at 350° for 15 minutes. Yields 24.
