Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- vanilla - 1 tsp
- lemon juice - 1 Tbsp
- vanilla wafers - 24 item
- cream cheese, softened 8 oz - 2 pkg
- can pie filling - 1 item
- sliced nuts optional - 1/2 c
How to make miniature cheesecakes:
You will need 24 cupcake liners.Line cupcake pans with liners. Place vanilla wafer in bottom of each liner. In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill liners 2/3 full with cheese mixture. Bake in preheated 375° oven for 15 to 20 minutes or until set. Top each with spoonful of filling and 1 teaspoon of nuts. Chill.
