  • water - 8 c
  • vegetable oil - 2 Tbsp
  • olive oil - 2 Tbsp
  • tomato paste - 2 Tbsp
  • onions, chopped - 1 c
  • zucchini, sliced - 1 c
  • cabbage, shredded - 1 c
  • carrots, chopped - 1 c
  • potatoes, diced - 1 c
  • parsley, minced - 1/4 c
  • canned tomatoes - 2 c
  • celery, sliced - 1 c
  • garlic, minced - 1/4 Tbsp
  • can garbanzo beans, drained - 1 item
  • navy beans - 1/4 lb
  • small elbow macaroni - 1/4 c
  • salt, pepper, oregano and basil to taste - 1 item
  • chicken bouillon cubes Knorr - 2 item

How to make minestrone soup:

Soak beans in water in large pot overnight. Bring to boil and then simmer 1 hour. Heat oils in large saucepan and saute next 6 ingredients until limp. Add to cooked beans. Add next four ingredients and seasonings to soup. Simmer 30 minutes. Add garbanzo beans, macaroni and zucchini slices. Simmer another 30 minutes.
