Minestrone soup
Ingredients/Components
- water - 7 c
- parsley flakes - 1 tsp
- can stewed tomatoes - 1 oz
- oregano - 1 tsp
- basil - 1/2 tsp
- hamburger - 1/2 lb
- elbow macaroni - 1 1
- onion - 1 c
- celery - 1 c
- beef bouillon cubes - 7 item
- kidney beans optional - 1 c
- sliced or diced carrots - 1 c
How to make minestrone soup:
Place the first 9 ingredients in a large soup pot and simmer until vegetables are tender. While soup is simmering, make tiny meatballs to taste. Brown, then drain. Add kidney beans to soup; simmer 10 minutes. Add meatballs to soup; simmer 10 minutes. Add elbow macaroni and simmer until tender.Recipe categories: Vegetables, Soups & stews, Italian.
