Ingredients/Components

  • salad oil or olive - 1/2 c
  • chopped onion - 2 c
  • chopped parsley - 2 Tbsp
  • stalk celery, chopped - 1 item
  • tomato paste - 2 c
  • cans beef bouillon - 2 item
  • carrots, sliced thin - 2 item
  • water - 8 c
  • chopped cabbage - 1 c
  • salt - 2 tsp
  • pepper to taste - 1 item
  • small dash of sage - 1 item
  • can kidney beans - 1 item
  • zucchini, sliced thin - 1 item
  • can green beans - 1 item
  • elbow macaroni - 1 c

How to make minestrone soup:

In large pot heat oil. Add onion, parsley and celery. Cook until veggies are soft. Add tomato paste, bouillon, carrots, water, cabbage, salt, pepper and sage. Bring to boil, then simmer 1 hour. Add kidney beans, zucchini, green beans and macaroni. Cook 10 to 15 minutes or until macaroni is done.
