Minestrone soup
Ingredients/Components
- salad oil or olive - 1/2 c
- chopped onion - 2 c
- chopped parsley - 2 Tbsp
- stalk celery, chopped - 1 item
- tomato paste - 2 c
- cans beef bouillon - 2 item
- carrots, sliced thin - 2 item
- water - 8 c
- chopped cabbage - 1 c
- salt - 2 tsp
- pepper to taste - 1 item
- small dash of sage - 1 item
- can kidney beans - 1 item
- zucchini, sliced thin - 1 item
- can green beans - 1 item
- elbow macaroni - 1 c
How to make minestrone soup:
In large pot heat oil. Add onion, parsley and celery. Cook until veggies are soft. Add tomato paste, bouillon, carrots, water, cabbage, salt, pepper and sage. Bring to boil, then simmer 1 hour. Add kidney beans, zucchini, green beans and macaroni. Cook 10 to 15 minutes or until macaroni is done.Recipe categories: Vegetables, Soups & stews, Italian.
